Turkey Pesto Sandwich
Ingredients
PESTO
- 3 cups basil leaves
- 1/2 cup pine nuts
- 3 garlic cloves
- 1/4 tsp salt
- 1/8 tsp black pepper
- Juice from 1/2 lemon
- 1/4 cup olive oil
SANDWICH
- Sliced smoked turkey breast
- Muenster cheese slices
- Tomato slices
- Red onion slices
- Sandwich bread
Instructions
- Add the basil, pine nuts, garlic, salt, pepper, lemon juice, and olive oil to a food processor and blend until mostly smooth, scraping down the sides as needed. Taste and adjust seasoning or oil for your preferred consistency.
- Preheat a skillet or toaster and toast the sandwich bread until golden brown and lightly crisp on both sides.
- Spread a generous layer of pesto onto one side of each slice of toasted bread, making sure to cover edge to edge for maximum flavor.
- Layer sliced turkey evenly over the pesto, followed by Muenster cheese, tomato slices, and red onion.
- Close the sandwich, press gently, and slice in half before serving while warm and fresh.
