PESTO
- 3 cups basil leaves
- 1/2 cup pine nuts
- 3 garlic cloves
- 1/4 tsp salt
- 1/8 tsp black pepper
- Juice from 1/2 lemon
- 1/4 cup olive oil

Add the basil, pine nuts, garlic, salt, pepper, lemon juice, and olive oil to a food processor and blend until mostly smooth, scraping down the sides as needed. Taste and adjust seasoning or oil for your preferred consistency.
Preheat a skillet or toaster and toast the sandwich bread until golden brown and lightly crisp on both sides.
Spread a generous layer of pesto onto one side of each slice of toasted bread, making sure to cover edge to edge for maximum flavor.
Layer sliced turkey evenly over the pesto, followed by Muenster cheese, tomato slices, and red onion.
Close the sandwich, press gently, and slice in half before serving while warm and fresh.
