Ingredients

PESTO

  • 3 cups basil leaves
  • 1/2 cup pine nuts
  • 3 garlic cloves
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • Juice from 1/2 lemon
  • 1/4 cup olive oil

SANDWICH

  • Sliced smoked turkey breast
  • Muenster cheese slices
  • Tomato slices
  • Red onion slices
  • Sandwich bread

Instructions

  • Add the basil, pine nuts, garlic, salt, pepper, lemon juice, and olive oil to a food processor and blend until mostly smooth, scraping down the sides as needed. Taste and adjust seasoning or oil for your preferred consistency.
  • Preheat a skillet or toaster and toast the sandwich bread until golden brown and lightly crisp on both sides.
  • Spread a generous layer of pesto onto one side of each slice of toasted bread, making sure to cover edge to edge for maximum flavor.
  • Layer sliced turkey evenly over the pesto, followed by Muenster cheese, tomato slices, and red onion.
  • Close the sandwich, press gently, and slice in half before serving while warm and fresh.
