BBQ Chicken Dip
Ingredients
CHICKEN
- 2 chicken breasts
- BBQ rub of choice
DIP
- 8 oz cream cheese
- 8 oz cheddar cheese, shredded
- 8 oz mozzarella cheese, shredded
- 1 cup red onion, diced
- 1 cup corn, drained
- 1 cup sour cream
- 1 ranch seasoning packet
- 1 cup BBQ sauce
- 1/2 cup milk, optional
GARNISH
- BBQ sauce
- Ranch dressing
- Green onions
Instructions
- Light a grill with Kingsford briquettes and bring it to high heat, setting up a hot direct cooking zone.
- Season the chicken breasts generously with BBQ rub, then grill over high heat until cooked through and nicely charred, about 6–8 minutes per side.
- Remove the chicken from the grill, rest for a few minutes, then shred it into bite-sized pieces.
- Add the shredded chicken, cream cheese, cheddar, mozzarella, red onion, corn, sour cream, ranch seasoning, BBQ sauce, and milk if using to a cast iron skillet or foil pan, then mix until well combined.
- Place the pan back on the grill at 350°F and cook, stirring every 15 minutes, until the cheeses are melted and the dip is hot and bubbly, about 30–40 minutes.
- Remove from the grill and garnish with drizzles of ranch and BBQ sauce and a sprinkle of green onions before serving warm.
