Ingredients

CHICKEN

  • 2 chicken breasts
  • BBQ rub of choice

DIP

  • 8 oz cream cheese
  • 8 oz cheddar cheese shredded
  • 8 oz mozzarella cheese shredded
  • 1 cup red onion diced
  • 1 cup corn drained
  • 1 cup sour cream
  • 1 ranch seasoning packet
  • 1 cup BBQ sauce
  • 1/2 cup milk optional

GARNISH

  • BBQ sauce
  • Ranch dressing
  • Green onions

Instructions

  • Light a grill with Kingsford briquettes and bring it to high heat, setting up a hot direct cooking zone.
  • Season the chicken breasts generously with BBQ rub, then grill over high heat until cooked through and nicely charred, about 6–8 minutes per side.
  • Remove the chicken from the grill, rest for a few minutes, then shred it into bite-sized pieces.
  • Add the shredded chicken, cream cheese, cheddar, mozzarella, red onion, corn, sour cream, ranch seasoning, BBQ sauce, and milk if using to a cast iron skillet or foil pan, then mix until well combined.
  • Place the pan back on the grill at 350°F and cook, stirring every 15 minutes, until the cheeses are melted and the dip is hot and bubbly, about 30–40 minutes.
  • Remove from the grill and garnish with drizzles of ranch and BBQ sauce and a sprinkle of green onions before serving warm.
