Ingredients

DIP

  • 1 jar Grillo's dill pickles, chopped
  • 2 jalapeños, chopped
  • 1 bunch green onions, chopped
  • 1/2 cup shredded Colby jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1 cup Greek yogurt
  • 1 cup sour cream
  • 1 cup whipped cream cheese
  • 1 ranch seasoning packet
  • 1 lb bacon, cooked and chopped
  • 1 tbsp hot sauce
  • 1 tsp Cajun seasoning
  • 1-2 tbsp pickle juice

FOR SERVING

  • Potato chips
  • Tortilla chips

Instructions

  • Cook the bacon in a skillet over medium heat until crispy, about 8–10 minutes. Transfer to a paper towel-lined plate to cool, then chop into small pieces.
  • In a large mixing bowl, add the chopped pickles, jalapeños, and green onions. Stir to combine so the fresh ingredients are evenly distributed.
  • Add the shredded Colby jack cheese, cheddar cheese, Greek yogurt, sour cream, and whipped cream cheese to the bowl. Mix thoroughly until the base becomes smooth and creamy.
  • Sprinkle in the ranch seasoning, hot sauce, and Cajun seasoning, then stir again until everything is fully incorporated. The mixture should be thick and well blended.
  • Fold in the chopped bacon and add 1–2 tbsp of pickle juice to loosen the dip slightly and enhance the tangy flavor. Adjust seasoning to taste if needed.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to come together. Serve chilled with potato chips or tortilla chips for dipping.
