DIP
- 1 jar Grillo's dill pickles chopped
- 2 jalapeños chopped
- 1 bunch green onions chopped
- 1/2 cup shredded Colby jack cheese
- 1/2 cup shredded cheddar cheese
- 1 cup Greek yogurt
- 1 cup sour cream
- 1 cup whipped cream cheese
- 1 ranch seasoning packet
- 1 lb bacon cooked and chopped
- 1 tbsp hot sauce
- 1 tsp Cajun seasoning
- 1-2 tbsp pickle juice
FOR SERVING
- Potato chips
- Tortilla chips
Cook the bacon in a skillet over medium heat until crispy, about 8–10 minutes. Transfer to a paper towel-lined plate to cool, then chop into small pieces.
In a large mixing bowl, add the chopped pickles, jalapeños, and green onions. Stir to combine so the fresh ingredients are evenly distributed.
Add the shredded Colby jack cheese, cheddar cheese, Greek yogurt, sour cream, and whipped cream cheese to the bowl. Mix thoroughly until the base becomes smooth and creamy.
Sprinkle in the ranch seasoning, hot sauce, and Cajun seasoning, then stir again until everything is fully incorporated. The mixture should be thick and well blended.
Fold in the chopped bacon and add 1–2 tbsp of pickle juice to loosen the dip slightly and enhance the tangy flavor. Adjust seasoning to taste if needed.
Cover and refrigerate for at least 30 minutes to allow the flavors to come together. Serve chilled with potato chips or tortilla chips for dipping.
