Homemade Caesar Dressing
Ingredients
- 2 cups mayo
- 4 garlic cloves, minced
- 2 tsp anchovy paste
- 1 cup freshly grated Parmesan cheese
- Juice from 2 lemons
- 2 tsp Dijon mustard
- 2 tsp Worcestershire sauce
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Add the mayonnaise, minced garlic, anchovy paste, freshly grated Parmesan cheese, lemon juice, Dijon mustard, Worcestershire sauce, salt, and black pepper to a medium mixing bowl.
- Whisk the ingredients together until the dressing is completely smooth and the Parmesan is evenly incorporated. Scrape down the sides of the bowl as needed to ensure everything is fully mixed.
- Taste the dressing and adjust the seasoning to your preference by adding more lemon juice for brightness, Parmesan for richness, or black pepper for extra bite.
- Cover the bowl or transfer the dressing to an airtight container and refrigerate for at least 30 minutes before serving. This allows the garlic and Parmesan flavors to fully develop.
- Give the dressing one final stir before serving. If it has thickened too much in the refrigerator, whisk in a tablespoon or two of water or milk until it reaches your desired consistency.
- Store the dressing in an airtight container in the refrigerator for up to 5 days. Use it on Caesar salads, pasta salads, wraps, sandwiches, or as a dip for vegetables and chicken.
