Buffalo Chicken Queso
Ingredients
QUESO
- 32 oz white Velveeta
- 8 oz cream cheese
- 8 oz cheddar cheese, shredded
- 2 cups cooked shredded chicken
- 1/2 red onion, finely diced
- 1 packet ranch seasoning
- 2 cups milk
- 1 cup buffalo sauce
TOPPINGS
- Buffalo sauce
- Ranch dressing
- Blue cheese crumbles
- Chopped chives
Instructions
- In a medium saucepan over medium heat, combine Velveeta, cream cheese, cheddar, shredded chicken, red onion, ranch seasoning, milk, and buffalo sauce. Stir frequently until the cheeses melt completely and the mixture is smooth.
- Preheat your oven or smoker to 350°F if baking, or heat a portable griddle over medium heat for stovetop cooking.
- Transfer the queso mixture to an oven-safe dish or keep it in the griddle pan. Bake or heat for 30–45 minutes in the oven/smoker, or cook on the griddle for about 20 minutes, stirring occasionally to prevent sticking.
- Remove from heat once the queso is hot, bubbly, and fully combined.
- Garnish with additional buffalo sauce, drizzles of ranch dressing, blue cheese crumbles, and a sprinkle of chopped chives for extra flavor and presentation.
- Serve immediately with tortilla chips, crackers, or fresh veggies and enjoy this creamy, spicy, indulgent dip!
