Smoked Cheeseburger Dip
Ingredients
DIP
- 2 lbs ground beef
- 1 onion, diced
- 4 garlic cloves, minced
- 1 tbsp burger seasoning
- 2 lbs Velveeta, cubed
- 8 oz cheddar cheese, shredded
- 1/2 cup beer or milk, as needed
FOR SERVING
- Pickle de gallo or chopped pickles
- Chips or crackers
Instructions
- Preheat your smoker to 350°F, using hickory pellets for a bold, classic burger-style smoke.
- Cook the ground beef in a large cast iron skillet over medium high heat, breaking it up, until about 80% cooked and lightly browned.
- Stir in the diced onion, garlic, and burger seasoning, then continue cooking until the beef is fully cooked and the onions are soft and fragrant.
- Reduce the heat to medium low and add the Velveeta and cheddar cheese, stirring gently until the cheese begins to melt.
- Transfer the cast iron skillet to the smoker and cook for about 45 minutes, stirring every 15 minutes, until the cheese is fully melted and bubbly.
- Stir in the beer or milk as needed to loosen the dip, then remove from the smoker, top with pickle de gallo, and serve hot with your favorite dippers.
