Ingredients

DIP

  • 2 lbs ground beef
  • 1 onion diced
  • 4 garlic cloves minced
  • 1 tbsp burger seasoning
  • 2 lbs Velveeta cubed
  • 8 oz cheddar cheese shredded
  • 1/2 cup beer or milk as needed

FOR SERVING

  • Pickle de gallo or chopped pickles
  • Chips or crackers

Instructions

  • Preheat your smoker to 350°F, using hickory pellets for a bold, classic burger-style smoke.
  • Cook the ground beef in a large cast iron skillet over medium high heat, breaking it up, until about 80% cooked and lightly browned.
  • Stir in the diced onion, garlic, and burger seasoning, then continue cooking until the beef is fully cooked and the onions are soft and fragrant.
  • Reduce the heat to medium low and add the Velveeta and cheddar cheese, stirring gently until the cheese begins to melt.
  • Transfer the cast iron skillet to the smoker and cook for about 45 minutes, stirring every 15 minutes, until the cheese is fully melted and bubbly.
  • Stir in the beer or milk as needed to loosen the dip, then remove from the smoker, top with pickle de gallo, and serve hot with your favorite dippers.
