- 2 lbs ground beef
- 1 onion diced
- 4 garlic cloves minced
- 1 tbsp burger seasoning
- 2 lbs Velveeta cubed
- 8 oz cheddar cheese shredded
- 1/2 cup beer or milk as needed

- Pickle de gallo or chopped pickles
- Chips or crackers
Preheat your smoker to 350°F, using hickory pellets for a bold, classic burger-style smoke.
Cook the ground beef in a large cast iron skillet over medium high heat, breaking it up, until about 80% cooked and lightly browned.
Stir in the diced onion, garlic, and burger seasoning, then continue cooking until the beef is fully cooked and the onions are soft and fragrant.
Reduce the heat to medium low and add the Velveeta and cheddar cheese, stirring gently until the cheese begins to melt.
Transfer the cast iron skillet to the smoker and cook for about 45 minutes, stirring every 15 minutes, until the cheese is fully melted and bubbly.
Stir in the beer or milk as needed to loosen the dip, then remove from the smoker, top with pickle de gallo, and serve hot with your favorite dippers.
