Ingredients

RAMEN

  • 1 pack instant ramen noodles

SAUCE

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1–2 garlic cloves minced
  • 1/2 tbsp red pepper flakes
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp water

TOPPINGS

  • 1 egg
  • Green onions sliced
  • Everything but the bagel seasoning

Instructions

  • Cook the ramen noodles according to package directions, discarding the seasoning packet, then drain and set aside to cool slightly. This helps the noodles absorb the sauce without getting mushy.
  • Heat a pan over medium heat and melt the butter with the olive oil, then add the minced garlic and cook until fragrant, about 30 seconds. Stir in the red pepper flakes and let them bloom in the fat for another minute.
  • Add the soy sauce, brown sugar, and water, stirring until the mixture comes to a quick simmer and the sugar fully dissolves into a glossy sauce.
  • Add the cooked noodles to the pan and toss thoroughly until evenly coated, then push the noodles to one side of the pan.
  • Crack the egg into the empty side of the pan and cook to your preferred doneness, then mix it into the noodles for a rich, silky texture.
  • Remove from heat and finish with sliced green onions and a generous sprinkle of everything but the bagel seasoning before serving hot.
