Garlic Butter Steak Bites and Potatoes
Ingredients
STEAK
- 1.5 lb steak bites
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tbsp oil
POTATOES
- 1 lb yellow potatoes, quartered
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
GARLIC BUTTER
- 1 stick butter
- 4 garlic cloves, minced
- 2 tbsp chopped parsley
- 1 tbsp fresh thyme
- 1 tbsp fresh rosemary
- Pinch red pepper flakes
Instructions
- Pat the steak bites dry with paper towels and season evenly with salt, black pepper, and garlic powder. Heat a cast iron skillet over high heat until smoking hot, then add oil and sear the steak bites for 3–5 minutes, turning occasionally, until browned on all sides and cooked to your desired doneness. Remove from the pan and set aside.
- Reduce the heat to medium and add the quartered yellow potatoes directly to the same skillet. Season with salt, black pepper, garlic powder, and paprika, then cook for 5–7 minutes, stirring occasionally, until the potatoes are golden brown and fork-tender.
- Lower the heat to medium-low and return the steak bites to the skillet with the potatoes. Add butter, minced garlic, parsley, thyme, rosemary, and a pinch of red pepper flakes.
- Stir continuously as the butter melts, allowing the garlic to become fragrant and the herbs to infuse into the sauce. Cook for 2–3 minutes until everything is evenly coated and glossy.
- Spoon the garlic butter over the steak and potatoes to ensure every piece is coated. Remove from heat once the butter is fully melted and the flavors are combined.
- Serve immediately while hot, with extra chopped parsley on top if desired. Enjoy tender steak bites and crispy potatoes dripping in rich, herby garlic butter.
