Brisket Baked Beans

These Brisket Baked Beans are smoky, sweet, spicy, and loaded with brisket, bacon, and hearty ground beef in every bite. Slow smoked until thick and rich, this crowd-pleasing BBQ side dish is perfect for cookouts, tailgates, and backyard gatherings.

Ingredients 

  • 56 oz baked beans
  • 1 lb ground beef
  • 1 lb cooked brisket, chopped
  • 1 lb bacon, cooked and chopped
  • 1 –2 sweet onions, diced
  • 2 green peppers, diced
  • 1 bottle Sweet Baby Rays Sweet ‘n Spicy BBQ sauce
  • 1/2 cup brown sugar
  • 1/4 cup yellow mustard
  • 1/4 cup hot sauce
  • 3 tbsp BBQ rub

Instructions 

  • Preheat your smoker to 350°F for indirect cooking. While the smoker heats, cook the bacon in a skillet until crispy, then roughly chop and set aside.
  • In the same skillet, cook the ground beef over medium heat until fully browned, breaking it apart as it cooks. Add the diced onions and green peppers, sautéing for 5–7 minutes until softened and fragrant.
  • In a large foil pan or cast iron pan, combine the baked beans, cooked ground beef mixture, chopped brisket, and crispy bacon. Stir everything together thoroughly so the meats and vegetables are evenly distributed.
  • Pour in the BBQ sauce, brown sugar, yellow mustard, hot sauce, and BBQ rub. Mix thoroughly until all the beans are coated in the rich sweet and spicy sauce mixture.
  • Place the pan uncovered onto the smoker and cook for 2 hours, stirring every 30 minutes to prevent the edges from overcooking. As the beans cook, the sauce will slowly thicken and develop deep smoky flavor.
  • Once the beans are thick, bubbling, and caramelized around the edges, remove the pan from the smoker and let rest for a few minutes before serving. Serve warm alongside your favorite BBQ meats and enjoy.
