Bacon Wrapped Pickles

These Bacon Wrapped Pickles are smoky, crispy, and irresistibly tangy with every bite. The salty crunch of bacon wrapped around juicy pickle spears pairs perfectly with a creamy, spicy dipping sauce for the ultimate crowd-pleasing snack.

Ingredients 

PICKLES

  • 1 jar pickle spears, drained and patted dry
  • 1 package bacon
  • 1 tbsp BBQ rub

DIPPING SAUCE

  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp sriracha
  • 1 tbsp apple cider vinegar
  • INSTRUCTIONS

Instructions 

  • Preheat your smoker or oven to 350°F, setting it up for indirect heat if using a grill. Line a baking sheet with parchment paper or place a wire rack over a tray for even airflow.
  • Pat the pickle spears completely dry with paper towels to help the bacon crisp properly. Wrap each spear tightly with a slice of bacon, slightly overlapping the edges, and place seam-side down on the rack or tray.
  • Season the outside of the bacon evenly with BBQ rub, pressing lightly so it adheres. Make sure each piece is evenly coated for balanced flavor in every bite.
  • Cook for 35–40 minutes, rotating halfway through if needed, until the bacon is deeply golden and crispy. If desired, broil for 2–3 minutes at the end to achieve extra crisp texture.
  • While the pickles cook, combine mayonnaise, sour cream, sriracha, and apple cider vinegar in a bowl. Stir until smooth and creamy, then refrigerate until ready to serve.
  • Remove the bacon wrapped pickles from heat and let them rest for 3–5 minutes to set. Serve warm with the dipping sauce on the side and enjoy immediately.
