Ingredients

CARAMELIZED ONIONS

  • 2 yellow onions, thinly sliced
  • 1 tbsp butter
  • 1 tbsp oil
  • 1/2 tsp salt

DIP

  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/3 cup mayonnaise
  • 2 tbsp chives, finely chopped
  • 1/2 tsp black pepper

Instructions

  • Heat a skillet over medium-low heat and add butter and oil. Once melted, add the sliced onions and salt, stirring to coat evenly in the fat.
  • Cook the onions for about 25–30 minutes, stirring every 4–5 minutes, until they become deeply golden brown and soft. Adjust the heat as needed to prevent burning while allowing slow caramelization.
  • Remove the onions from heat and let them cool slightly. They should be jammy, sweet, and richly browned with very little moisture remaining.
  • In a mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Stir until smooth and creamy with no lumps remaining.
  • Fold in the caramelized onions and chopped chives, mixing thoroughly to distribute the flavor evenly. Season with black pepper and adjust salt to taste.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or slightly cool with potato chips or fresh vegetables.
