Ingredients

BURGERS

  • 1 lb ground beef
  • 1 large sweet onion very thinly sliced
  • Salt
  • Black pepper
  • Garlic powder
  • 4 slices American cheese
  • 4 potato buns

BURGER SAUCE

  • 1/3 cup mayo
  • 1/4 cup ketchup
  • 2 tbsp dill pickle relish
  • 1 tbsp chives
  • 1 tbsp Worcestershire sauce

Instructions

  • Preheat a flat-top griddle or cast-iron skillet over high heat until fully hot and lightly smoking. While the griddle heats, portion the beef into 2 oz balls and keep them chilled.
  • Place a beef ball on the griddle, top with a small handful of thinly sliced onions, and immediately smash firmly into the surface to create a very thin patty.
  • Season generously with salt, pepper, and garlic powder.
  • Let the burger cook undisturbed for 2–3 minutes until a deep golden-brown crust forms and the onions begin to caramelize into the meat.
  • Flip the burger, add a slice of American cheese, and cook for another 1–2 minutes until the cheese is melted and the beef is cooked through.
  • Stir together the mayo, ketchup, dill pickle relish, chives, and Worcestershire sauce until smooth and well combined.
  • Toast the potato buns lightly, spread burger sauce on both sides, add the smashburger, and finish with extra sauce before serving hot.
