In a large mixing bowl, combine the eggs, half-and-half, vanilla extract or vanilla bean paste, and ground cinnamon. Whisk everything together until the eggs are fully incorporated and the mixture is smooth and evenly combined.
Separate the King's Hawaiian Maple Brown Sugar Rolls into individual rolls, keeping each one whole. Dip each roll into the egg mixture, turning to coat all sides evenly and allowing the bread to absorb some of the custard without becoming overly saturated.
Preheat a large nonstick skillet or griddle over medium to medium-high heat, around 325–350°F. Add a little butter to the cooking surface and allow it to melt, spreading it evenly to prevent the rolls from sticking.
Place the coated rolls onto the hot griddle, leaving a little space between each one. Cook for approximately 2–3 minutes per side, turning occasionally until all sides are golden brown and lightly caramelized. Adjust the heat as needed to prevent the sugar in the rolls from burning before the centers are cooked through.
Once the French toast bites are golden brown on all sides and the egg mixture is fully cooked, remove them from the griddle and transfer them to a serving platter. Repeat with the remaining rolls, adding more butter to the griddle as needed.
Dust the Maple Brown Sugar French Toast Bites generously with powdered sugar and drizzle with warm maple syrup before serving. King's Hawaiian Original Sweet Rolls also work great if you can't find the Maple Brown Sugar Rolls, although you'll miss out on the extra maple brown sugar flavor baked into the bread. Serve immediately while warm and enjoy!
