BACON JAM
- 1 lb bacon diced
- 1 yellow onion diced
- 2 –3 cloves garlic minced
- 1 tbsp hot sauce
- 1/4 cup brown sugar
- 1/4 cup maple syrup
- 1/4 cup apple cider vinegar
Heat a large skillet over medium heat and add the diced bacon. Cook for 8–10 minutes, stirring occasionally, until the bacon becomes crispy and the fat is fully rendered.
Remove the crispy bacon from the skillet using a slotted spoon, leaving about 1–2 tbsp of bacon grease in the pan. Add the diced onion and sauté for 5–7 minutes until soft and lightly caramelized.
Stir in the minced garlic and cook for another 1–2 minutes until fragrant. Be careful not to burn the garlic as it cooks quickly in the hot bacon fat.
Add the cooked bacon back into the skillet along with the hot sauce, brown sugar, maple syrup, and apple cider vinegar. Stir thoroughly so everything is evenly coated.
Reduce the heat to medium-low and simmer for 10–15 minutes, stirring occasionally, until the mixture thickens into a sticky jam consistency. The sauce will continue to thicken slightly as it cools.
Remove from the heat and allow the bacon jam to cool for a few minutes before serving. Spoon generously onto burgers, sandwiches, or toast and enjoy warm.
