- 3 28 oz cans baked beans, drained
- 1 –2 sweet onions diced
- 2 green bell peppers diced
- 1 cup BBQ sauce
- 1 cup brown sugar
- 1/4 cup yellow mustard
- 2 tbsp hot sauce
- 3 tbsp BBQ rub
Preheat your smoker or oven to 350°F, setting it up for indirect heat if using a smoker. This moderate temperature allows the beans to slowly thicken while developing a subtle smoky flavor.
Drain the baked beans and add them to a large cast iron skillet, aluminum pan, or disposable foil pan along with the diced sweet onions and green bell peppers. Stir everything together until the vegetables are evenly distributed.
Add the BBQ sauce, brown sugar, yellow mustard, hot sauce, and BBQ rub to the pan. Mix thoroughly until the beans are evenly coated and all of the ingredients are well combined.
Place the pan uncovered in the smoker or oven and cook for about 2 hours, stirring every 30–40 minutes. As the beans cook, the sauce will reduce and become thick, glossy, and caramelized.
Continue cooking until the onions and peppers are tender and the beans have reached your desired consistency. If you prefer a thicker bean mixture, cook for an additional 15–20 minutes, stirring occasionally.
Remove the beans from the smoker or oven and let them rest for 5–10 minutes before serving. Serve warm alongside burgers, hot dogs, ribs, pulled pork, brisket, or your favorite barbecue dishes.
