Loaded Birria Cheesesteak Fries

These Loaded Birria Cheesesteak Fries are packed with bold, smoky flavor from marinated ribeye, caramelized onions, melty cheese, and crispy fries. Finished with rich birria sauce and creamy toppings, this is the ultimate loaded fries recipe for any cookout or game day spread.

Ingredients 

BIRRIA CHEESESTEAK

  • 2 lbs thinly shaved ribeye
  • 2 cup Birria BBQ sauce, divided
  • 1 tbsp neutral oil
  • 1 onion, diced
  • FRIES
  • 1 bag frozen fries
  • Seasoning salt, to taste
  • TOPPINGS
  • White American cheese
  • Avocado crema
  • Additional birria BBQ sauce
  • Onion and cilantro, chopped

Instructions 

  • Add the shaved ribeye to a bowl and marinate with about 1 cup of birria BBQ sauce. Let it sit for at least 30 minutes to absorb the bold flavors while you prepare the rest of the ingredients.
  • Preheat your grill to high heat and place a wok directly over the coals until it begins to lightly smoke. Add neutral oil followed by the diced onion, sautéing for 5–7 minutes until softened and lightly caramelized, then remove and set aside.
  • Add the marinated ribeye to the hot wok, spreading it out to get a good sear. Cook for 4–6 minutes, chopping and stirring as it cooks until fully done, then mix the onions back in along with the remaining birria BBQ sauce.
  • While the steak cooks, prepare the fries according to package instructions, either in the oven or air fryer, until golden brown and crispy. Season immediately with seasoning salt once they come out.
  • To assemble, layer the hot fries onto a serving platter and top with slices of white American cheese so they begin to melt. Add the hot birria cheesesteak mixture directly over the fries.
  • Finish by drizzling with additional birria BBQ sauce and avocado crema, then top with chopped onion and cilantro. Serve immediately while hot and loaded with flavor.
